樹齢3年目のヤマソービニオンに立派な花が咲いたこと、
マイマイガのケムシが大量発生し、雨の降らない日が2週間も続いた過酷な春を乗り越え、みんな、たくましく生きてきた。
落ち着いてきた姿を見て、たくましくなったなぁと思って、すごく嬉しくて、愛しくて、言葉にならない。

解体してきたぶどう畑のコンクリ柱といただいてきたコンクリ柱、苔が生えてて、なんて愛おしい。
アンカー打つ場所間違えるし、畑灌パイプは噴水になるし、いっぱい怪我して寝れなくなるし、ワイヤー張りすぎてコンクリ柱何本も折って、
でも、できた。なんて愛おしい。

ふぅ。
ワインの棚を建てるための資材が少し足りなかったので、林の中からぶどう棚を解体して資材を確保してきた。
これからようやく去年の春に林の中から解体したビニールハウスとワイン棚を建てていくのに、身体が悲鳴をあげている。毎年冬は夏より身体が異常事態である。
何事も挑戦して失敗してばかりで困ってばかりだけれど、色んな人に助けられて少しずつでも思うように進めていて、ありがたい、ありがたい。
失敗しても、怒られても、落ち込んでも、立ち上がることをやめなければ、大丈夫は、ある。

7トン近くの籾殻（もみがら）をもらってきて、毎日少しずつ燻炭（くんたん）にしている。籾殻くんたんは、微生物の住処になって、過剰投入でアルカリに傾く以外はデメリットもほとんどなく、土壌改良にはもってこいだけど、手間がかかるし量が作れないから難しいかなぁ、と思っていたけど、やってみたら意外とやれそうである！
半分の区画はカルスや米ぬかとすき混んで土中堆肥化を試みたいと思っているけど、カルスも高額なのでできるかどうか、、こちらは根が行く前の列間の土壌で低温堆肥化できるから、籾殻の成分が無駄になることなく土に還っていくので、燻炭とはずいぶん結果が変わってくると思う。
毎日こつこつ、少しずつできることをやっていけたら、いいなぁ。

どれほど基礎や知識を身につけても、最初と最後は感覚に尽きるのがものづくりです。感覚はバランスと経験による蓄積がもたらすもので、それを更につきつめていった先に、直覚というものが生まれます。直覚とは、その真逆で引き算と度量の積み重ねによって磨かれていくものです。そしてそれは環境によってもたらされる「覚えさせられる」ようなものに近いので、直覚と呼ぶのです。感覚は言語化に向かう意識を呼び起こしますが、直覚は言語化などしたくない、させたくない、況やできないと思うほどいのちに近いものです。世間一般における一流の人は「感覚」に重きを置きますが、「ほんもの」をつくる、ふれる、味わう人は直覚に重きを置きます。
僕は世間一般の評価基準に準ずるためのものづくりではなく、大切な人のいのちに温もりを運べるようなものを作りたいと日々感じています。

研修先の研修にお供させて頂き、数件のワイナリーを訪ね、畑から醸造までを見せていただきました。様々な形態や考え方があり、細部の工夫を数多知れたのはありがいた経験でした。
ただ、いつも思うのは、この世界一に近いノウハウの溜まった地域で「ぶどうづくり」というところからスタートした自分はとてもいい修行が出来ているということです。切っても切り離せない栽培から醸造までの流れを、一貫して突き詰められている方はそう多くはありません。
ご縁を大切に、目の前のやれることを、やり続けたいと強く感じます。

I had the privilege of visiting several wineries, observing everything from vineyards to winemaking. It reinforced how fortunate I am to have started with grape cultivation in a region rich in expertise. Few can fully explore the seamless connection between growing and winemaking. I am committed to cherishing these connections and doing my best in the present.

誰かが不誠実に生きた時、その責めを負わなければならない人がいるけれど、降りしきる雪も温もりに溶けてゆくように、over comeと共にある風景に私たちは生かされている。溶けた雪は大地に潤いをもたらし、積もった雪は春に新たないのちの芽吹きをもたらす。私たちはそんな世界の片隅の一欠片であるといふことを、忘れたくない。

When someone lives dishonestly, there will always be someone who bears the burden of that responsibility. Yet, just as falling snow melts away with warmth, we are sustained by the landscapes shaped by overcoming. The melted snow nourishes the earth, while the snow that accumulates brings forth new life in spring.

I don’t want to forget that we are but a small fragment in the corner of such a world.

今日で恐らく今年の参加出来る最後の仕込みでした。1年目の研修は、ほぼ全ての工程を実際にやらせてもらえて、身体を通して流れを掴めた、そんな年でした。日々ずーっと痛感したのは、いいブドウをつくらなきゃならないってこと。とかく健康で、風味も味わいもその品種の持つポテンシャルが最も引き出されているような、そんな状態のぶどうを目指していかなきゃならないと、そのためにやれることを全てやっていきたいと頭では分かっていたけど、身体を通して本当によく分かりました。たくさん素敵な人に出会えて、温もりに触れられて、本当に感謝感謝です。冬は土作り、環境づくり、やりたいことが無限にあります。

Today was probably the last winemaking session I could participate in this year. During this first year of training, I was given the opportunity to experience almost every stage of the process, allowing me to grasp the overall flow through hands-on experience. What I felt deeply every single day was the importance of growing excellent grapes.
I need to aim for grapes that are not only healthy but also bring out the full potential of their variety in terms of flavor and taste. Although I had always understood this in my mind, going through the process physically made me truly realize it.
I’m incredibly grateful for all the wonderful people I’ve met and the warmth I’ve felt along the way. This winter, I’ll focus on soil preparation and creating the right environment. There are endless things I want to accomplish.

ペーパークロマトグラフィで総酸の内訳を見ています。下から酒石酸、リンゴ酸、乳酸の順で、大きさ（長さ）を見て含有量を判断できます。乳酸菌の働きによって、リンゴ酸が乳酸になるMLFという工程がどのぐらい進んだのかをチェックします。リンゴ酸が乳酸に変わるとCOOH（酸）が1つ無くなるのもあって、尖った酸っぱさのあったワインが、まろやかな味に変わります。微生物たち、菌たち、すごいです、すごいです。

Using paper chromatography to analyze the breakdown of total acidity, tartaric acid, malic acid, and lactic acid appear in order from the bottom, with length indicating their concentration. By observing the malolactic fermentation (MLF) process, in which lactic acid bacteria convert malic acid to lactic acid, the progress of this process can be checked. When malic acid turns into lactic acid, one COOH (acid group) is removed, transforming a wine with sharp acidity into a smoother taste. Microorganisms and bacteria are incredible—truly amazing!

Using paper chromatography to analyze the breakdown of total acidity, tartaric acid, malic acid, and lactic acid appear in order from the bottom, with length indicating their concentration. By observing the malolactic fermentation (MLF) process, in which lactic acid bacteria convert malic acid to lactic acid, the progress of this process can be checked. When malic acid turns into lactic acid, one COOH (acid group) is removed, transforming a wine with sharp acidity into a smoother taste. Microorganisms and bacteria are incredible—truly amazing!

このようにワインをワインらしくするための工夫がたくさんたくさんあって、それは「美味しいものを作る」というよりも、「ワインとして売るからにはいいワインを作る」という考えが源流にあるとも言えると思います。だけれども、もともと日本では、風土に沿って生み出されてきた葡萄酒の歴史と文化がそれほど確立されていたわけではありません。そこに西洋的な風土から築かれたワインの文化を流し込んだわけで、そうなると、日本の風土に根ざした生活をしている多くの人にとっては、いわゆる「いいワイン」を「美味しいもの」「ゆたかなもの」に紐づけるのは無理があるのかもしれないと思うことが、よくあります。
「ワイン」としては欠陥臭と言われる臭いでも、日本人には別に気にならないかもしれないし、ぶどうの特徴を削って削って仕上げる白ワインよりも、全房で仕込んだお茶のような白ワインの方が、奥深くて美味しいと思う日本人は多いのかもしれません。なんてよく思うのです。

There are many such techniques to make wine more “wine-like,” and the goal isn’t just to create something delicious but to make a wine worthy of being sold as a good wine. However, Japan’s history and culture of winemaking, shaped by its unique climate, isn’t deeply established. So, when we bring Western wine culture into this context, it sometimes feels forced to link the idea of “good wine” with something rich and delicious for many people in Japan. What might be considered a flaw in Western wines could go unnoticed here, and some may even prefer white wines made with whole clusters, reminiscent of tea, over those heavily polished for refinement.

ここ数年で、これまでは作れていた真っ黒の品種が、どんどん色が付かなくなってきています。気候変動の影響は間違いなくあって、これまでなんとなく作れてきたヨーロッパ品種は、ほとんどが大変な目に遭い、もうこの国では栽培が難しくなってきています。
ぶどうの質が悪ければ悪いほど、醸造の時に添加するものは増えるし、添加しないと逆に有害なワインになってしまう可能性が上がっていきます。
西洋の「ワイン」というジャンル、その評価基準や常識を一度抜けて、日本的なぶどう品種にもっと目を向けて、日本の風土に根差した葡萄酒を0から見つめ直していく時が来ているのかもしれません。
しかし、それは喫緊の経営の問題と、長年の経験から転換せねばならないハードルから、多くの醸造関係者にとって難しいのが今の現状です。寧ろ消費者の多くのほうが、西洋的なワインの固定概念に支配されているのが今のこの国の現実であり、そうなると醸造家たちはそこから逸脱することがより難しくなっています。
ナチュラル、ナチュールという思想も、ヒトも含めて自ずから然るものであるとする日本の伝統的な風土性とはやはり源流を異にしているため、不思議な沼と化してしまうのです。

In recent years, once deep-black grape varieties have struggled to develop their color. Climate change is undoubtedly at play, and many European varieties that once thrived are now facing increasing difficulties, making cultivation in this country nearly impossible.

The poorer the grape quality, the more additives are required in winemaking, and without them, the risk of producing harmful wine rises. It may be time to step outside the Western notion of "wine" and its rigid standards, to focus on native Japanese varieties and rediscover wines rooted in Japan's unique landscape.

Yet, for many winemakers, shifting from long-held traditions and facing urgent business realities is a monumental challenge. Ironically, it is often the consumers who are more entrenched in Western ideals, making it even harder for winemakers to break free. Even the concepts of "natural" or "nature" diverge from Japan's deep cultural harmony with the land, turning this pursuit into a strange and complex journey.

一次発酵させた後の醪（もろみ）を手動で潰す伝統的な道具を初めて体験しました。潰して出た果汁は二次発酵、熟成へ向かっていきます。潰しきった後のカスはこんな感じで綺麗なホールケーキのようになって、みんなで今回のケーキ入刀は誰がやるんだなんてだいたい話すわけですが、初めてでウキウキの僕が思いきりスコップで崩し出してもうたのでした。

I experienced using a traditional tool to manually crush the moromi after the first fermentation for the first time. The juice pressed out moves on to the second fermentation and aging. The leftover pulp forms a beautiful cake-like shape, and we usually joke about who will cut the "cake" this time. But I went ahead and smashed it all with a shovel.

なんでも始まりは大掃除です。ヤマブドウ畑を目の前にする農具入れ倉庫の中から重たい農具を移動させ、ブロワーでゴミを吐き出し、掃除機をかけて、何度も何度も雑巾がけ。泥だらけにゴミだらけになって、ようやく住めそうな拠点が完成しました。吉と一緒にこの電波も届かない小屋で暮らし、修行に勤しむ日々が始まりました。

Every beginning is a deep clean. We cleared out the heavy tools from the shed facing the wild grapevines, blew out the dust, vacuumed, and wiped it down again and again. Covered in mud and debris, we finally made it livable. Now, with Kichi by my side, the days of training in this humble shelter have begun.

Currently in the first year of both vine age and training, the hope is to one day create grapes and wines that evoke the memory of the landscape. With a prayer that this will eventually lead to an unrecognizable landscape, the endeavor was named "ReLive vine".
